Se utilizar codornizes congeladas, deixe-as descongelar sem que fiquem em contacto com a água que vão libertando;<br />Lave e escorra as codornizes;<br />Prepare uma pasta com o sal, a pimenta, o alho, o colorau e barre as codornizes por fora e por dentro da cavidade. Coloque-as num recipiente e adicione o vinho branco. Deixe-as a marinar até ao dia seguinte;<br /></div><strong>No próprio dia<br /></strong>Preencha a cavidade de cada uma das codornizes com uma folha de louro, salsa, tomilho e uma lima sem casca e sem pele;<br /><strong>Assado no forno<br /></strong><div style="text-align: justify;">Aqueça o forna a 180.ºC;<br />Pincele o fundo de um tabuleiro de forno com azeite;<br />Disponha as codornizes no tabuleiro sobre cada uma das 4 tiras de bacon. Borrife com azeite e polvilhe com um pouco de sal;<br />Cubra o tabuleiro com folha de alumínio e leve ao forno. If you use frozen ones, make sure the defrosted water is drained away and doesn’t get in touch with it;<br />Wash the quails and dry;<br />Make a paste with salt, pepper, garlic and paprika and rub the quails inside the cavity and outside as well. <br />O Caldo Verde é provavelmente uma das mais típicas receitas da culinária portuguesa. Raro é o menu de Natal ou de Ano Novo que não inclui o Caldo Verde como grande final. Associado às festas populares, às casas de fados e a todas as noites longas, o Caldo Verde funciona como uma poção mágica retemperadora de energias.
<br />Embora a gastronomia de outros países apresente receitas algo similares, o nosso Caldo Verde é originário do Minho, província mais a Norte de Portugal. Na sua forma mais clássica é cozinhado com batata, couve galega, chouriço e azeite embora existam variantes que lhes adicionam nabo, cenoura, feijão ou até carne.
<br />O Caldo Verde é ainda uma excelente fonte de vitaminas e, sobretudo, de ácido fólico, nutriente com elevada importância antes e durante a gravidez.
<br />
<br /><strong>VAI PRECISAR DE (serve 4 a 6):
<br /></strong>50 ml de azeite extra virgem;
<br />1 cebola, picada;
<br />4 dentes de alho, picados;
<br />1 folha de louro;
<br />½ chouriço, fatiado;
<br />6 batatas grande;
<br />½ nabo;
<br />300 gr de couve galega, laminada (em Macau use Kai-Lan);
<br />Sal e pimenta;
<br />Água fervente.

<br /><strong>MÉTODO:
<br /></strong>Numa panela aqueça o azeite e adicione a cebola, o alho, o louro e deixe cozinhar alguns minutos;
<br />Adicione o chouriço e deixe-o alourar suavemente. Retire o chouriço e reserve;
<br />Retire o louro;
<br />Adicione as batatas e o nabo em rodelas e salteie durante 2 ou 3 minutos;
<br />Tempere com sal e pimenta;
<br />Adicione água fervente suficiente para cobrir bem todos os ingredientes e deixe levantar fervura;
<br />Quando os ingredientes estiverem bem cozidos processe-os até obter um creme aveludado;
<br />Adicione um pouco de água se o creme obtido for demasiado espesso e deixe levantar fervura de novo;
<br />Adicione a couve laminada e deixe cozer. Não deixe cozer demasiado;
<br />Sirva decorado com um fio de azeite e algumas rodelas de chouriço.

<br />Caldo Verde, among the most traditional recipes of the Portuguese culinary, it’s a soup very simple to prepare and a truly delightful addition to a supper table, a New Year’s Eve or a night at a Portuguese Fado House. Works just like a comforting potion in the middle of a long night.
<br />Originally from Minho, a top North province of Portugal, Caldo Verde is classically made of potatoes, cabbage (kale) and chorizo but some options include turnip, carrot, beans or even meat. The original and authentic cabbage used in this recipe is named “Couve Galega”, referring to the typical cabbage of that northern region.
<br />A very healthy meal, this soup is also an excellent source of folic acid, very important before and during pregnancy.
<br />
<br /><strong>YOU WILL NEED (serves 4 to 6):
<br /></strong>50 ml / 1 ¾ fl oz extra virgin olive oil;
<br />1 yellow onion;
<br />4 garlic cloves;
<br />1 bay leaf;
<br />½ courizo, sliced;
<br />6 big potatoes;
<br />½ white turnip;
<br />300 gr / 10 ½ oz of fresh kale, chopped (in Macau use Kai-Lan, the most similar);
<br />Salt and peeper;
<br />Extra virgin olive oil to drizzle.

<br /><strong>METHOD:
<br /></strong>In a big pot, heat olive oil, add onion, garlic, bay leaf and sauté until clear;
<br />Add chorizo slices and sauté a few minutes more;
<br />Remove chorizo slices and reserve;
<br />Discard bay leaf;
<br />Add potatoes and turnip, peeled and sliced;
<br />Season with salt and peeper;
<br />Add enough boiling water to cover everything very well and bring it to a boil;
<br />When all vegetables are soft and tender cut the heat and process everything in a blender. Return it to the pot;
<br />Add a little more water if it is too thick and bring to a boil;
<br />Add chopped kale and stir. Cook until soft but don’t over cook;
<br />Drizzle in a few drops of olive oil and garnish with chorizo slices;

<br /><div style="text-align: justify;">Esta é apenas mais uma sugestão para cozinhar um típico prato de arroz “malandro”. Optei por combinar o tradicional arroz de línguas de bacalhau com o igualmente tradicional arroz de grelos. Ambos deliciosos, porque não envolvê-los nesta dança de sabores?!
<br />Em Macau não é muito difícil encontrar línguas de bacalhau (supermercados Seng Cheong ou US Mart) se bem que os seus importadores e/ou vendedores resolveram subir drasticamente o seu preço, escudando-se na subida do preço de origem que não pode justificar um aumento de 100%. Menos vendem!
<br />Relativamente aos grelos, como dificilmente se encontram em Macau os tradicionais grelos portugueses, substitui os ditos pelos vulgares Kai-Lan chineses, disponíveis em qualquer casa de vegetais cá do sítio.
<br />Para que esta receita fosse uma refeição completa, optei por acompanhar o arroz em causa com umas tiras de bacalhau fritas que facilmente pode substituir por outro peixe a seu gosto.

<br /><strong>VAI PRECISAR DE (serve 4):
<br />Tiras de bacalhau fritas
<br /></strong>500 gr de bacalhau alto, demolhado e cortado em tiras de 1 a 2 cm de espessura;
<br />Ovo batido;
<br />Pão ralado;
<br />Óleo vegetal para fritar;
<br />Sumo de limão.
<br /><strong>Arroz de línguas de bacalhau e grelos
<br /></strong>700 gr de línguas de bacalhau;
<br />300 gr de grelos de couve (em Macau use Kai-Lan);
<br />100 ml de azeite extra virgem;
<br />1 cebola, picada;
<br />3 dentes de alho, picados;
<br />2 folhas de louro;
<br />1 colher de chá de colorau;
<br />150 ml de vinho branco;
<br />Sal e pimenta;
<br />300 gr de arroz (carolino de preferência);
<br />Água fervente;
<br />Coentros frescos, picados;
<br />
<br /><strong>MÉTODO:
<br />1 dia antes de cozinhar
<br /></strong>Demolhe as línguas de bacalhau e a posta de bacalhau para fritar;
<br />Depois de demolhado, escorra e reserve.
<br /><strong>Tiras de bacalhau fritas
<br /></strong>Passe as tiras de bacalhau por ovo batido e posteriormente por pão ralado;
<br />Frite em óleo vegetal bem quente até obter uma cor dourada;
<br />Escorra em papel absorvente;
<br />Borrife com sumo de limão e reserve em local morno.
<br /><strong>Arroz de línguas de bacalhau e grelos
<br /></strong><div style="text-align: justify;">Num tacho ou caçarola aqueça o azeite e adicione, pela referida ordem, cebola, alho, louro, colorau e vinho branco. Deixe cozinhar cerca de 10 minutos em lume médio;
<br />Adicione água fervente e deixe levantar fervura;
<br />Tempere com sal e pimenta;
<br />Adicione as línguas de bacalhau e deixe levantar fervura;
<br />Adicione os grelos bem lavados e cortados grosseiramente e deixe voltar a ferver;
<br />Adicione o arroz e envolva bem. Quando voltar a ferver tape e baixe o lume;
<br />Mexa ocasionalmente para evitar que agarre;
<br />Quando sentir o arroz quase cozido corte o lume e adicione os coentros picados e envolva bem;
<br />Sem retirar a tampa deixe o arroz apurar apenas alguns minutos;

<br />Another way to cook a typical Portuguese damp rice dish is this suggestion of codfish tongues and Kai-Lan rice. It is usual to cook either a codfish tongues rice or Kai-Lan rice (named in Portuguese as Arroz de Grelos), but I suggest this combination of both recipes, in a way to balance salt, sweet and bitter flavors.
<br />Codfish tongues can be found in round plastic boxes with seawater, in several supermarkets in Macau such as Seng Cheong or US Mart. But you can buy and use any other parts of dried salty codfish.
<br />To replace the Portuguese Grelos we have to look for the most similar greens, which are the Kai-Lan or Gai-Lan (Chinese kale or Chinese broccoli), a greens variety used very commonly in all Asian food.
<br />To make this recipe a whole meal I chose deep fried codfish loins but any other kind of deep fried fish will be a good option.

<br /><strong>YOU WILL NEED (serves 4):
<br />Fried codfish loins
<br /></strong>500 gr / 1 lb and 1 ½ oz of salt codfish loins;
<br />Egg wash to dip codfish loins and
<br />Breadcrumbs to coat it;
<br />Vegetable oil to deep fry;
<br />Lemon juice, freshly squeezed.
<br /><strong>Codfish tongues rice
<br /></strong>700 gr / 1 lb and 8 ¾ oz of salty codfish tongues;
<br />300 gr / 10 ½ oz of fresh Kai-Lan;
<br />100 ml / 3 ½ fl oz of extra virgin olive oil;
<br />1 yellow onion, diced;
<br />3 garlic cloves, sliced;
<br />2 bay leaves;
<br />1 teaspoon of paprika;
<br />150 ml / 5 ¼ fl oz of white wine;
<br />Salt and pepper;
<br />300 gr / 10 ½ oz of long grain rice;
<br />Water;
<br />1 handful of fresh coriander, coarsely chopped;

<br /></strong>Rinse codfish tongues and codfish loins very well and leave it in cold water (in the refrigerator) for 20 to 24 hours, changing the water several times to reduce the saltiness of the fish;

<br /></strong>In a saucepan, heat olive oil and add, by this order, onion, garlic, bay leaves, paprika and white wine. Let it cook for around 10 minutes on medium to low heat;

<br />Wash Kai-Lan very well and drain. Chop coarsely;

The principal ingredient of this simple dish is dogfish, a specie of shark: Squaliformes Squalidae, so if you have any prejudice against eating this relative of the shark you may prefer to use some other firm white fish.<br />Dogfish is not easy to find in Macau, but my dear friend Santos has this recipe sometimes available at the daily menu and found me several slices, enabling me to cook this soup for you.<br />What makes the difference in this recipe is the final gentle touch of vinegar or lemon juice mixed with a small amount of wheat flour, giving this soup an exquisite texture and flavor.<br /><br /><strong>YOU WILL NEED (serves 4):<br /></strong>600 gr (1 lb and 5 ¼ oz) of dogfish slices, without skin;<br />Salt and pepper;<br />3 garlic cloves, sliced;<br />1 bay leaf;<br />100 ml (3 ½ fl oz) of extra virgin olive oil;<br />1 litre of boiling water;<br />Good branch of fresh coriander;<br />4 tablespoons of wheat flour<br />4 tablespoons of wine vinegar;<br />Lightly toasted bread slices.<br /><br /><strong>METHOD:<br /></strong>Wash fish slices, drain, season with salt and reserve.<br />In a pot, heat olive oil and fry half of fresh coriander twigs with bay leaf. When done, discard fried coriander and bay leaf.<br />Add garlic to the hot aromatized olive oil and sauté until soft.<br />Add fish slices, sealing evenly on both sides for around 5 minutes. Nada a esconder, o cação é primo direito do tubarão (ordem: Squaliformes, família: Squalidae), pelo que se tem algum preconceito sobre em cozinhar ou comer este peixe pode perfeitamente preparar esta sopa com qualquer outro peixe de sua preferência. Como o cação, mesmo congelado, é coisa rara em Macau, tive que recorrer ao meu Compadre e amigo Santos que me disponibilizou um saco do dito primo do tubarão. Como ele disponibiliza este prato no menu do restaurante tem sempre uma reserva amiga no armazém. A ele os meus agradecimentos. O que faz a diferença neste prato é o toque final do vinagre ou do limão com uma pequena quantidade de farinha, responsáveis pela textura aveludada e pelo sabor único desta sopa que vai ficar na sua memória para sempre.<br /><br /><strong>VAI PRECISAR DE (serve 4):<br /></strong>600 gr de cação em postas, sem pele; <br />Sal e pimenta; <br />3 dentes de alho, laminados; <br />1 folha de louro; <br />100 ml de azeite extra virgem; <br />1 litro de água fervente; <br />1 molho de coentros; <br />4 colheres de sopa de farinha; <br />4 colheres de sopa de vinagre; <br />Fatias de pão ligeiramente tostado<br /></div><br /><div style="text-align: justify;"><strong>MÉTODO:</strong><br /><strong></strong>Lave o peixe, escorra, tempere com sal e reserve; <br />Num tacho aqueça o azeite e frite metade do molho de coentros e a folha de louro. Quando os coentros estiverem fritos remova-os juntamente com a folha de louro e deite fora; <br />Ao azeite aromatizado pelos coentros adicione o alho e salteie sem deixar fritar; <br />Adicione o peixe ao azeite quente e sele-o de ambos os lados, durante cerca de 5 minutos. Deixe cozinhar durante cerca de 30 minutos em lume brando, até reduzir e ganhar consistência; </div><div style="text-align: justify;">Corte o lume e adicione manjericão fresco, picado (ou salsa) e envolva. Reserve.<br /><strong>MOLDAR E RECHEAR OS AGNOLOTTI </strong></div><div style="text-align: justify;"><strong></strong>A ideia base é formar pequenas bolsas fechadas de massa fresca recheadas com o creme de queijo e espinafres; </div><div style="text-align: justify;">Estenda a massa fresca em folhas finas com um rolo ou com uma máquina de rolos própria para estender massa fresca. Trabalhe uma folha de cada vez com a restante massa tapada para evitar que seque; </div><div style="text-align: justify;">Coloque um folha de massa sobre uma superfície polvilhada com farinha e apare as pontas para que fique com uma forma direita; </div><div style="text-align: justify;">Coloque pequenas quantidades de creme de queijo e Ricotta tendo em conta a forma final quadrada dos Agnolotti. Deixe espaço suficiente para poder cortar e selar cada um deles; </div><div style="text-align: justify;">Coloque outra folha de massa sobre o recheio. Corte em quadrados e sele os bordos de cada um com a pressão dos seus dedos. Se a massa já estiver muito seca, pode recorrer a um pouco de água ou de clara de ovo para facilitar o processo.<br /><strong>COZER E SERVIR </strong></div><div style="text-align: justify;"><strong></strong>Coza os Agnolotti num tacho grande com água fervente e sal. A massa fresca deverá levar cerca de 3 a 5 minutos a ficar cozida mas quando verificar que os seus Agnolotti estão a flutuar e a ficar translúcidos é sinal de que estão cozidos. Pour water eggs and olive oil into the well; </div><div>Slowly, bring the flour in to the centre until you get a mix with a good consistency; </div><div>Knead until you get a silky-smooth dought; </div><div>Wrap the dough in plastic wrap to ensure that it does not dry out. Let the dough rest for at least 30 minutes before rolling it through a pasta machine or flatten it manually.<br /><strong>SPINACH RICOTTA FILLING </strong></div><div><strong></strong>Blend boiled spinach softly. Drain well; </div><div>Add ricotta cheese, also drained; </div><div>Season with salt, pepper and grounded nutmeg; </div><div>Mix homogeneously all ingredients; </div><div>Take this paste to the refrigerator.<br /><strong>TOMATO SAUCE </strong></div><div><strong></strong>In a saucepan, heat olive oil and add, by this order, onion, garlic, tomato, tomato paste, drizzle of white wine and season with salt. Let it cook for around 30 minutes in medium to low heat until reduced; </div><div>Cut the heat, add fresh basil leaves or parsley, chopped, and stir. Reserve.<br /><strong>STUFFING </strong></div><div><strong></strong>The general idea is to make small sealed pockets of pasta with spinach ricotta filling; </div><div>Divide the dough into pieces and roll it through a pasta machine or flatten it in sheets manually. It is important that your pasta sheets are thin enough to mold it easily;</div><div>Work with one sheet of pasta at a time, keeping the remaining sheets covered. Do it quickly, as fresh pasta will dry out; </div><div>Lay one pasta sheet on a lightly floured surface and trim the edges so it become straight; </div><div>Place spoons of spinach ricotta filling considering the final shape squares, leaving enough border between them to allow the Agnolotti cutting and seal; </div><div>Place another sheet of pasta over the filling. Cut and seal each Agnolotti by carefully molding the pasta over the filling and pressing lightly with your fingers to seal the edges. Use water or egg wash to help the sealing process if the pasta is to dry;<br /><div><strong>BOIL AND SERVE </strong></div><div><strong></strong>Boil Agnolotti in a large pot of boiling water and salt. É ideal para encerrar uma refeição na medida em que não é uma sobremesa muito pesada. É uma receita de fácil execução e com um custo relativamente baixo. Embora o formato aqui apresentado seja o mais tradicional, este pudim pode ser preparado noutro recipiente, com diferente tamanho ou formato, de encontro ao seu gosto pessoal.<br />Para conseguir o melhor resultado nesta receita recolhi as melhores instruções da pessoa mais indicada, a minha amiga Teresa Tavares. A forma exemplar como ela cozinha este pudim, a bem da gastronomia portuguesa, merece a partilha que ora faço convosco.<br /></div><br /><strong>VAI PRECISAR DE (serve 8):<br /></strong>Pudim<br />1 litro de leite gordo;<br />350 gr de açúcar;<br />10 ovos;<br />2 folhas de gelatina;<br />Casca de limão;<br />Paus de canela (1 ou 2);<br />Vagem de baunilha (opcional);<br />Açúcar caramelizado<br />6 colheres de sopa de açúcar;<br />4 colheres de sopa de água;<br />1 colher de café de sumo de limão ou vinagre;<br />Forma<br />Forma de pudim com tampa, com cerca de 20 cm de diâmetro.<br /><br /><strong>MÉTODO:<br /></strong><div style="text-align: justify;">Para preparar o açúcar caramelizado utilize um recipiente de fundo grosso, sobre lume brando. Envolva o açúcar e a água e deixe ferver, mexendo, até obter uma cor âmbar. Adicione o limão ou vinagre, envolva e corte o lume. Tenha em conta que a alta temperatura continuará a caramelizar o açúcar pelo que deverá cortar o lume alguns minutos antes de atingir o ponto de caramelo;<br />Verta o caramelo para a forma e, rodando-a, forre bem o fundo e as paredes laterais. Mantenha esta operação até o caramelo arrefecer e solidificar;<br />Em lume brando, ferva o leite com a casca de limão, a canela e a vagem de baunilha inteira. Assim que levantar fervura, corte o lume e retire o limão, a canela e a baunilha;<br />Adicione ao leite as folhas de gelatina após uma lavagem muito rápida. Mexa até dissolver a gelatina;<br />Numa taça, bata os ovos com o açúcar até obter um creme homogéneo;<br />Lentamente, adicione o leite aos ovos com açúcar mexendo sempre para evitar grumos;<br />Passe a mistura por um passador e verta-a para a forma do pudim já forrada com caramelo;<br />Coloque a forma tapada dentro de um tacho grande com água já fervente e coza o pudim em banho-maria durante cerca de 25 minutos. Ideal to complement a great meal or to serve at teatime, this pudding is easy to cook and not expensive at all. Can be cooked in different sizes or shapes, according to your molds or appetite.<br />To get the best result on this recipe I’ve talked to Teresa Tavares, my long time friend here in Macau. She is an expert cooking this pudding and I’m here to share with you some tips I receive from her. <br /></div><br /><strong>YOU WILL NEED (serves 8):<br /></strong>Pudding<br />1 litre / 35 ¼ fl oz of full cream milk;<br />350 gr / 12 ¼ oz of sugar;<br />10 whole eggs;<br />2 gelatine leaves;<br />Lemon peel;<br />Cinnamon sticks (1 or 2);<br />Vanilla pod (optional);<br />Caramelized sugar<br />6 to 8 tablespoons of sugar;<br />4 tablespoons of water;<br />Drops of vinegar or lemon juice;<br />Mold<br />Steam Pudding mold with 20 cm / 8 inch diameter.<br /><br /><strong>METHOD:<br /></strong><div style="text-align: justify;">In a thick bottom pan or skillet, over medium heat, place sugar, water and drops of vinegar or lemon juice. Bring it to a boil during a few minutes. Stir to allow sugar to cook consistently. Continue boiling until the liquid is the color of amber. Cut the heat and drop the liquid into the mold to coat it homogeneously. Don’t leave the liquid in the pan, even after cut the heat, because it will continue to cook and become to dark;<br />Over medium heat, bring the milk with lemon peel, cinnamon sticks and vanilla pod to a simmer. After start boil, cut the heat, discard lemon peel, cinnamon and vanilla;<br />Add pre-washed gelatine leaves to the hot milk and stir until dissolved;<br />In a bowl, beat eggs and sugar until thick and creamy;<br />Add the hot milk to the bowl, dash-by-dash, whisking constantly to avoid curdles;<br />Run the mixture through a sifter to avoid possible egg chunks or any curdles;<br />Pour the mixture into the caramel coated mold and cover with the lid;<br />Using a large pot prepare a water bath to cook the pudding in a Bain-Marie (double-boiler) over the stovetop (the water level should cover 2/3 of the mold). After start boiling, turn the heat low and place the pudding mold inside the water bath. Allow it to cook around 25 minutes. Check the cooking point by stick a spaghetti line into the pudding (if it comes out dry, the pudding is cooked). Recipiente de cozinha de origem mourisca, consequentemente com uso não aconselhável a quem tem alguma coisa contra os Mouros!<br />A Cataplana de Mariscos é um prato de simples preparação onde o maior cuidado reside na escolha dos melhores ingredientes possíveis. Podem ser usados todos os tipos de mariscos ou peixes, com o cuidado de evitar bivalves ou peixes poluídos ou não frescos.<br />Para quem vive em Macau, o pior mesmo é encontrar a Cataplana. Ou então terem a sorte que tenho com os meus amigos. Foi o Joaquim Adelino, homem mais previdente que eu, que tornou possível esta cataplana, que agora partinho convosco. A ele o meu obrigado.<br /></div><br /><strong>VAI PRECISAR DE (serve 6):<br /></strong>Cataplana com cerca de 40 cm de diâmetro;<br />100 ml de azeite extra virgem;<br />200g de cebola, laminada;<br />4 dentes de alho, laminados;<br />1 colher de chá de colorau;<br />2 folhas de louro;<br />1 malagueta;<br />Sal;<br />400g de tomate maduro, limpo de pele e sementes (ou tomate enlatado de boa qualidade);<br />2 colheres de sopa de polpa de tomate;<br />300g de batatas, previamente cozidas, laminadas;<br />2 pimentos, em tiras (1 verde e 1 vermelho);<br />1 colher de chá de orégãos secos;<br />1 mão cheia de coentros, grosseiramente picados;<br />300g de camarão;<br />300g de lagosta ou caranguejo;<br />300g de amêijoas ou mexilhões;<br />300g de vieiras;<br />300g de lulas, choco ou polvo;<br />300g de tamboril ou outro peixe de sua preferência (opcional);<br />200 ml de vinho branco;<br />Sumo de ½ limão;<br />1 colher de café de caril;<br />1 colher de café de pó de cúrcuma.<br /><br /><strong>MÉTODO:<br /></strong><div style="TEXT-ALIGN: justify">Coza previamente lulas, choco ou polvo com um copo de água e sal durante cerca de 20 minutos. The food is placed in the bottom half of the pan, then the hinged lid is closed enabling the ingredients to simmer together, keeping all its flavours. It is used on the stovetop, over low heat. If you can’t find a Cataplana, just use a wok covered with a close fitting lid. Thanks to my friend Joaquim, I was able to cook my Cataplana in the genuine recipient, as you can see in the photo. The Cataplana is just the perfect way to steam seafood. Choose your favorite seafood varieties, layer it in the pan, season with spices and herbs and wait wile the steam works. Prawns, lobster, crab, spider crab, clams, mussels, sea scallops, squid, cuttlefish, octopus, monkfish or other kind of white fish are good options. As The Cataplana cooking time is to short (about 15 to 20 minutes over low heat), you should pre-cook the hard texture seafood such as squid, cuttlefish or octopus before you start to assemble it with the remaining ingredients. <br /><br /><strong>YOU WILL NEED (serves 6): <br /></strong>A Cataplana or a wok with around 40 cm / 15 inches; <br />100 ml / 3 ½ fl oz extra virgin olive oil; <br />200g / 7 ¼ oz of onion, sliced; <br />4 garlic cloves, sliced; <br />1 teaspoon of paprika; <br />2 bay leaves; <br />1 fresh chili, sliced; <br />Salt; <br />400g / 14 ¼ oz of fresh ripe skinless tomatoes, sliced (or caned tomatoes); <br />2 tablespoons of tomato paste; <br />300g / 10 ½ oz of pre-boiled potatoes, sliced; <br />2 bell peppers, in stripes (green and red); <br />1 teaspoon of oregano; <br />1 handful of fresh coriander, coarsely chopped; <br />300g / 10 ½ oz of prawns; <br />300g / 10 ½ oz of lobster or crab; <br />300g / 10 ½ oz of clams or mussels; <br />300g / 10 ½ oz of sea scallops; <br />300g / 10 ½ oz of squid, cuttlefish or octopus; <br />300g / 10 ½ oz of monkfish or other fish of your preference (optional); <br />200 ml / 7 ¼ fl oz of white wine; <br />Juice of ½ lemon; <br />1 coffee spoon of turmeric powder; <br />1 coffee spoon of curry;<br /></div><br /><div style="TEXT-ALIGN: justify"><strong>METHOD:</strong><br /><strong></strong>Precook hard seafood (squid, cuttlefish or octopus) with a cup of water and salt during 20 minutes. Drain, cut in pieces and set aside; <br />On the stovetop, over low heat, place the bottom half of the pan and drizzle in extra virgin olive oil; <br />Place the shells in the bottom of the pan to avoid catching; <br />Add paprika, bay leaves, chili and salt; <br />Add half of the following ingredients: onion, garlic, tomato, tomato paste, potato, bell pepper, oregano and coriander; <br />Add all the seafood in layers, starting from the hard texture one (squid, cuttlefish or octopus), progressively to the soft one (sea escallops or fish); <br />Add the remaining onion, garlic, tomato, tomato paste, potato, bell pepper, oregano and coriander; <br />Drizzle in white wine; <br />Whisk lemon juice with saffron and curry powders and add it to the pan; <br />Add more salt, according to your taste; <br />Close with the upper lid and simmer over low heat for 15 minutes; <br />Cut the heat and open the Cataplana very careful, avoiding the hot steam to burn your face. Esta “lasanha” de vegetais vai depois ao forno para gratinar uma última camada de queijos, permitindo que todos os ingredientes se envolvam num conjunto harmonioso e muito, muito saboroso.<br />A versão que agora partilho foi preparada com beringela grelhada, opção muito mais saudável, limpa e económica que a versão frita na medida em que dispensa óleo, ovo e pão ralado para a respectiva fritura. A courgette é uma alternativa à beringela se for essa a sua vontade.<br />Embora duvide seriamente que lhe sobre alguma coisa no fim da refeição, é um prato que pode ser cozinhado e conservado no frigorífico durante vários dias, o que lhe permite uma refeição sempre pronta a servir.<br /><br />VAI PRECISAR DE (serve 4 a 6):<br />3 a 4 beringelas bem firmes;<br />Sal e pimenta;<br />Azeite extra virgem;<br />1 cebola, picada;<br />3 dentes de alho, picados;<br />1 folha de louro;<br />750 gr de tomate maduro, limpo de pele e sementes (ou tomate enlatado de boa qualidade);<br />2 colheres de sopa de polpa de tomate;<br />1 colher de sopa de orégãos;<br />Vinho branco;<br />Manjericão ou salsa (ou ambos), picados;<br />200 gr de queijo Mozzarella, ralado;<br />200 gr de queijo Parmesão, ralado;<br /><br />MÉTODO:<br />Tempere as beringelas cortadas em rodelas ou tiras com cerca de 1 cm de espessura com azeite, sal e pimenta. Grelhe em forno quente ou em qualquer tipo de grelhador até que apresente uma textura macia e uma cor ligeiramente dourada. Reserve;<br />Numa caçarola, aqueça azeite e adicione por ordem a cebola, o alho, o louro, o tomate, a polpa de tomate, os orégãos, vinho branco e tempere com sal. Deixe cozinhar durante cerca de 30 minutos em lume brando, até reduzir;<br />Adicione o manjericão ou a salsa, mexa e corte o lume;<br />Aqueça o forno a 180ºC;<br />Num tabuleiro de forno alterne camadas de beringela, molho de tomate, Mozzarella e Parmesão ralados até obter 3 a 4 conjuntos de camadas, devendo a última camada de queijos ser generosa. Although the puritans mention fried eggplant as the correct ingredient, there are plenty of recipes suggesting to grill it, resulting in a much more healthy option. You can use courgette instead of eggplant, meaning that the original recipe can be changed according to your taste. Parmigiana, like I show you here, is a vegetarian combination, ideal to serve as a complete meal or simply as an antipasto or side dish. After baked, if you don’t devour it all at once, you can keep the remaining Parmigiana in the refrigerator for several days. It works very well to arrive home and calm down your or your children nervous system, believe me.<br /><br /><strong>YOU WILL NEED (serves 4 to 6):<br /></strong>3 to 4 large and firm purple eggplants;<br />Salt and pepper;<br />Extra virgin olive oil;<br />1 yellow onion, diced;<br />3 garlic cloves, diced;<br />1 bay leaf;<br />750 gr / 1 lb and 10 ½ oz of fresh ripe skinless tomatoes, diced (you can use good quality canned tomatoes);<br />2 tablespoons of tomato paste;<br />1 tablespoon of oregano;<br />Drizzle of white wine;<br />Fresh basil leaves or parsley, coarsely chopped;<br />200 gr / 7 ¼ oz of freshly grated Mozzarella cheese;<br />200 gr / 7 ¼ oz of freshly grated Parmesan cheese;<br /><br /><strong>METHOD:<br /></strong>Cut eggplants in round slices or lengthwise, around 1 cm (1/2 inch) thick;<br />Brush eggplant pieces on both sides with olive oil and sprinkle with salt and pepper;<br />Take it to a preheated oven in a baking tray or grill it until soft and light brown. Reserve;<br />In a saucepan, heat olive oil and add, by this order, onion, garlic, bay leaf, tomato, tomato paste, oregano, a drizzle of white wine and season with salt. Let it cook for around 30 minutes in medium to low heat until reduced. I like to use the sauce chunky but you can purée it;<br />Add fresh basil leaves or parsley, coarsely chopped, and stir gently;<br />Preheat your over to 180ºC/ 350ºF;<br />In a greased deep oven dish, alternate layers of grilled eggplant, tomato sauce and grated Mozzarella and Parmesan cheese. Contudo, a lista de ingredientes apresentada deve funcionar apenas como uma referência, podendo sofrer as alterações que achar indicadas de modo a preparar a Massada de Peixe ao seu estilo pessoal. À base da receita poderá adicionar qualquer tipo de massa ou mesmo arroz se for essa a sua opção. Rodelas de batata ou ovos para escalfar serão também possíveis opções. Sobre o peixe, opte pelo mais fresco que lhe for possível adquirir sendo certo que pode utilizar várias espécies (tamboril, cherne, garoupa, pargo, sargo ou bacalhau são bons exemplos). As ervas aromáticas ideais para este prato são os orégãos, os poêjos, os coentros ou a hortelã da ribeira. Habitualmente uso pelo menos duas destas variedades ou não fossem as ervas aromáticas a alma da cozinha que venero.<br /></div><br /><div style="TEXT-ALIGN: justify"></div><div style="TEXT-ALIGN: justify"></div><strong>VAI PRECISAR DE (serve 4):<br /></strong>500 gr de peixe de boa qualidade (tamboril, cherne, garoupa, pargo, sargo ou bacalhau são boas opções);<br />100 ml de azeite extra virgem;<br />1 cebola, picada;<br />3 dentes de alho, fatiados;<br />1 folha de louro;<br />1 malagueta (opcional);<br />400 gr de tomate maduro, limpo de pele e sementes, picado (ou tomate em lata de boa qualidade);<br />1 colher de sopa de polpa de tomate;<br />1 colher de chá de colorau;<br />1 colher de chá de orégãos secos;<br />150 ml de vinho branco;<br />Sal;<br />Algumas tiras de pimento verde ou vermelho;<br />300 gr de massa cotovelos ou cotovelinhos;<br />1 mão cheia de coentros, grosseiramente picados;<br />Poêjos secos ou frescos (mentha pulegium);<br />Água fervente.<br /><br /><strong>MÉTODO:<br /></strong><div style="TEXT-ALIGN: justify">Coza o peixe em água e sal. Filtre a água da cozedura e reserve. Remova pele e espinhas, obtendo pedaços de peixe de bom tamanho;<br />Num tacho, aqueça o azeite e adicione, por esta ordem, cebola, alho, louro, malagueta, colorau, tomate, polpa de tomate, pimento, vinho branco e orégãos. Deixe cozinhar durante cerca de 15 minutos em lume brando;<br />Retire o louro;<br />Se não gosta de sentir os pedaços de cebola e tomate, processe o molho na varinha ou no copo misturador e devolva-o ao tacho;<br />Adicione parte da água da cozedura do peixe e deixe levantar fervura;<br />Tempere com sal;<br />Adicione os pedaços de peixe, envolva com cuidado e deixe voltar a ferver;<br />Adicione a massa, mexa para evitar que se cole, tape e deixe ferver em lume brando. Adicione mais água do peixe se necessário;<br />Mexa algumas vezes até que a massa fique cozida <em>al dente</em>;<br />Corte o lume, adicione os coentros e o poêjo e envolva suavemente;<br />Decore com mais algumas tiras de pimento e coentros (opcional);<br />Tape e leve o tacho para a mesa. May 2011 bring you all the best.<br />If you feel “tired” of last night’s spree this is a very good option for your first lunch of the year.<br />Typical from the South of Portugal, this fish stew is very easy to do. The ingredients down listed are just a basic reference that can be adapted according to your favorite taste. The idea is to make a stock as flavorful as possible to cook the pasta.<br />You can add any kind of pasta or even rice. Sliced potatoes or poached eggs are also possible options to add to the stew. Only about the fish you should be more careful, choosing a good quality one (the ideal is to mix more then one kind of fish). My favorite traditional herbs for this recipe are pennyroyal, dried oregano or coriander (or all together, like I do here). However, you can use many other herbs of your preference.<br /></div><br /><strong>YOU WILL NEED (serves 4):<br /></strong>500 gr / 1 lb and 1 ½ oz of good quality fish (sea bream, perch, trout, codfish, snapper, monkfish, skate are good options);<br />100 ml / 3 ½ fl oz extra virgin olive oil;<br />1 yellow onion, diced;<br />3 garlic cloves, sliced;<br />1 bay leaf;<br />1 fresh chili (optional);<br />400 gr / 14 ¼ oz of fresh ripe skinless tomatoes, diced (or good quality caned tomato);<br />1 tablespoon of tomato paste;<br />1 teaspoon of paprika;<br />1 teaspoon of dried oregano;<br />150 ml / 5 ¼ fl oz of white wine;<br />Sea salt<br />Red and green bell pepper stripes;<br />300 gr / 10 ½ oz of elbow pasta (or other kind of your choice);<br />1 handful of fresh coriander coarsely chopped;<br />Fresh or dried pennyroyal (mentha pulegium);<br />Water.<br /><br /><strong>METHOD:<br /></strong><div style="TEXT-ALIGN: justify">Boil fish with water and salt. Remove fish from the boil, clean skin and bones and flake it in good size chunks. Filter the water and reserve;<br />In a saucepan, heat olive oil and add, by this order, onion, garlic, bay leaves, chili, paprika, tomato, tomato paste, a few bell pepper stripes, white wine and oregano. Let it cook for around 15 minutes on medium to low heat;<br />Remove bay leaves and discard;<br />If you don’t like to feel tomato and union pieces, just blend this sauce into a pure and return it to the pot;<br />Add reserved fish boil water, and bring it to a boil;<br />Season with sea salt;<br />Add fish chunks, stir gently and bring back the boil;<br />Add elbow pasta, add more water if necessary and bring back the boil. Cover the saucepan and turn the heat low;<br />Give it a stir once in a wile to avoid pasta from sticking together;<br />Add chopped coriander and pennyroyal and stir gently;<br />Garnish with bell pepper stripes (optional) and extra fresh coriander;<br />Put the lid on and let it simmer for a few minutes before serving. Registam os sábios da história culinária que este "pão doce", decorado com frutas cristalizadas e frutos secos, chegou a Portugal por volta do final do Século 17, com origem na França de Luis XIV, onde era conhecido por “Gâteau dês Róis”. A delícia rápidamente se tornou popular em Lisboa, estendendo com facilidade as suas "virtudes" por todo o território português.<br />O Bolo Rei esconde uma fava seca na sua massa que significava originalmnete a sorte e que designada o rei do bolo, ao qual cabia a coroa que o ornamentava ao centro. Hoje em dia decide apenas quem é o próximo candidato a amassar ou a comprar o Bolo Rei seguinte. Como a minha princesa não gosta de frutas cristalizadas nem de passas de uva, fiz algumas adaptações à receita tradicional do Bolo Rei, substituindo esses ingredientes por dois poderosos antioxidantes naturais: oxicocos (em inglês<em> - cranberries, </em>nome científico - <em>vaccinium oxycoccos</em>) e mirtílos (em inglês - <em>blueberries</em>) e vários frutos secos. Ou não fosse o Natal sinónimo de amor e compreensão!<br /><br /><strong>VAI PRECISAR DE:<br /></strong>900 gr de farinha de trigo, sem fermento;<br />50 gr de fermento orgânico;<br />50 ml de leite morno;<br />350 gr de açúcar;<br />5 ovos;<br />Raspa de uma laranja;<br />Raspa de um limão;<br />Pitada de sal;<br />1 colher de chá de canela;<br />100 ml de cerveja preta;<br />100 gr de manteiga, derretida;<br />100 ml de vinho do porto;<br />75 gr de miolo de pinhão;<br />75 gr de miolo de noz;<br />75 gr de amêndoas;<br />75 gr de castanhas do pará;<br />100 gr de oxicocos (<em>cranberies) </em>secos;<br />75 gr de mirtílos (<em>blueberries)</em> secos;<br />Ovo batido;<br />Fogos secos para decorar;<br />Tâmaras para decorar; </div><div style="TEXT-ALIGN: justify">1 fava seca;<br />4 colheres de sopa de doce de alperce;<br />Açúcar em pó para polvilhar;<br />Manteiga e farinha para untar e polvilhar o tabuleiro;<br /></div><br /><div style="TEXT-ALIGN: justify"><strong>MÉTODO:</strong><br /><strong></strong>Espalhe todos os frutos secos num tabuleiro e leve-os ao forno a tostar ligeiramente;<br />Pique grosseiramente todos esses frutos secos, reservando alguns para a decoração do bolo;<br />Envolva os frutos secos picados, os oxicocos (<em>crenberies)</em> e os mirtílos <em>(blueberies)</em> no vinho do porto e reserve;<br />Dissolva o fermento no leite morno e reserve durante 10 minutos;<br />Numa taça grande incorpore o fermento dissolvido no leite com 250 gr de farinha e amasse bem. Adicione água ou mais farinha de forma a obter uma massa leve e elástica, de textura semelhante a massa de pão;<br />Molde a massa em forma de bola e deixe-a repousar e fermentar durante uma hora em local morno;<br />A essa massa incorpore o açúcar, a restante farinha (650 gr), as raspas da laranja e do limão, a pitada de sal, a canela e a cerveja preta. Amasse muito bem, podendo utilizar um batedor eléctrico;<br />Adicione os ovos, um a um, incorporando-os na massa;<br />Incorpore a manteiga e continue a amassar;<br />Adicione mais alguma farinha se a massa estiver muito branda. This kind of sweet bread with a hole in the centre, decorated with candied fruit and nuts, is commonly enjoyed on Christmas (December 25th), New Year’s Eve and Kings Day (January 6th).<br />It is suspected to have arrived in Portugal around the end of 17th century, from the France of Luis XIV, named as a “Gâteau dês Róis”. Quickly became popular in Lisbon and then throughout all the country.<br />Traditionally this cake hides a fava bean in its dough witch represents lucky. Some consider the finder of the fava bean as the king of the celebration. Others commit the finder to buy or to bake the next Bolo Rei, so be aware of “fava bean evaders”!<br />My Princess doesn’t like candied fruit or raisins in this royal cake usual composition, so I switched it for cranberries, blueberries and several kinds of nuts to suit her taste. As a matter of fact, Christmas is all about caring and sharing, right?!<br /></div><br /><strong>YOU WILL NEED:<br /></strong>900 gr / 1 lb and 15 ¾ oz of all purpose flour or bread flour;<br />50 gr / 1 ¾ oz of active dry yeast;<br />50 ml / 1 <span style="font-size:85%;">3/4</span> fl oz of warm milk;<br />350 gr / 12 ¼ oz of sugar;<br />5 eggs;<br />Scrapings of 1 orange;<br />Scrapings of 1 lemon;<br />Pinch of salt;<br />1 teaspoon of ground cinnamon;<br />100 ml / 3 1/2 fl oz of black beer;<br />100 gr / 3 ½ oz of butter, melted;<br />100 ml / 3 ½ fl oz of Port Wine;<br />75 gr / 2 ½ oz of pine seeds;<br />75 gr / 2 ½ oz of walnuts;<br />75 gr / 2 ½ oz of almonds;<br />75 gr / 2 ½ oz of Brazil nuts;<br />100 gr / 3 ½ oz of dried cranberries;<br />75 gr / 2 ½ oz of dried blueberries;<br />Egg wash;<br />Dried figs for decoration;<br />Dried dates for decoration;<br />4 tablespoons of apricot jam;<br />Icing sugar to dust the cake;<br />Butter to grease;<br />Flour to dust;<br /><br /><div style="TEXT-ALIGN: justify"><strong>METHOD:</strong><br /><strong></strong>Spread all the nuts on a baking sheet and take it to the oven for a very light toast;<br />Chop coarsely all the nuts, saving some for the decoration;<br />Soak the chopped nuts, cranberries and blueberries in Port Wine and reserve until you need to incorporate it in the dough;<br />Dissolve active yeast with warm milk and let it stand for 10 minutes;<br />In a large bowl incorporate the dissolved yeast with 250 gr / 8 ¾ oz of flour and mix very well. As dried porcini mushrooms are expensive and not so easy to find, I use a small amount of it to mix with fresh mushrooms, always available here in Macau for a very good price and quality.<br />This pasta recipe served with a slice of toasted sole fish is a very good option to include fish in your diet. Instead of sole fish, you can use any kind of flatfish or other fish of your preference, such as sea bream, perch, salmon or a simple fish filet.<br />A simple decoration of dill and pink pepper is just to remind you that Christmas is right there (published on Macau Daily Times, December, 04th, 2010). </div><div style="TEXT-ALIGN: justify"><br /><strong>YOU WILL NEED (serves 4):<br /></strong>600 gr / 1 lb and 5 ¼ oz of sole fish (4 slices);<br />300 gr / 10 ½ oz of fresh shimeji mushrooms;<br />100 gr / 3 ½ oz of dried porcini mushrooms;<br />400 gr / 14 ¼ oz of spaghetti;<br />Pink pepper, freshly grounded;<br />Lemon juice;<br />Extra virgin olive oil;<br />Salt;<br />2 bay leaves;<br />3 garlic cloves, sliced;<br />150 ml / 5 ¼ fl oz of white wine;<br />150 ml / 5 ¼ fl oz of coffee;<br />Tablespoon of butter;<br />200 ml / 7 ¼ fl oz of cream;<br />Drops of truffle oil (optional).<br />Fresh dill;<br /><br /></div><div style="TEXT-ALIGN: justify"><strong>METHOD:</strong><br /><strong>Fish:</strong><br /><strong></strong>Make sure the fish is cleaned and scaled (if you use frozen fish, defrost it avoiding contact with its own water);<br />Rub the fish with a sauce made from olive oil, lemon juice, salt and grounded pink pepper. É ideal para festas ou jantares numerosos uma vez que é difícil cozinhar esta receita em pequenas quantidades. Pode igualmente conservar esta feijoada no frigorífico por vários dias ou até mesmo congelar uma parte da mesma.<br />Sobre a composição deste tipo de feijoada, ficará ao seu critério se quer utilizar choco, lulas ou polvo. Também pode não utilizar camarão. Sobre o tipo de feijão, prefiro o manteiga. Mas pode optar por feijão encarnado, branco, borlotti ou outro de sua preferência. Se usar feijão seco, já sabe que o deve demolhar previamente.<br /><br /></div><div align="justify">O seu gosto pessoal deve ainda determinar quais as ervas aromáticas que prefere adicionar à sua feijoada de choco.<br /></div><br /><br /><div align="justify"><strong>VAI PRECISAR DE (serve 6 a 8):<br /></strong>1.2 kg de choco limpo;<br />300 gr de camarões;<br />Sal;<br />Sumo de limão;<br />150 ml de azeite extra virgem;<br />1 e 1/2 cebola;<br />4 dentes de alho;<br />2 folhas de louro;<br />1 malagueta;<br />300 gr de tomate maduro, limpo de pele e sementes;<br />1 colher de sopa de polpa de tomate;<br />1 colher de chá de orégãos;<br />100 gr de nabo, finamente picado;<br />1 cenoura, fatiada;<br />100 gr de chouriço, cortado em rodelas;<br />2 copos de vinho branco;<br />Água fervente;<br />800 gr de feijão manteiga, cozido ou pré-demolhado;<br />1 mão cheia de coentros, picados;<br /><br /><strong>MÉTODO:<br /></strong>Abra e limpe o choco. Lave, escorra e tempere com sal e sumo de limão. Reserve pelo menos durante uma hora;<br />Pré-cozinhe o choco num tacho com sal, 1 copo de água, 1 copo de vinho branco, 1/2 cebola e uma folha de louro. Tape e deixe ferver durante 20 a 30 minutos;<br />Escorra o choco cozido e corte em quadrados. Reserve parte da água da cozedura do choco para adicionar ao refogado;<br />Coza os camarões com um copo de água e sal. Dependendo do seu tamanho, deverão ferver de 3 a 5 minutos. Escorra e reserve;<br />Num tacho grande aqueça o azeite e adicione, por esta ordem, cebola, alho, 1 folha de louro, malagueta, tomate, polpa de tomate, orégãos, nabo, cenoura, chouriço e 1 copo de vinho branco. Deixe cozinhar em lume brando durante cerca de 15 minutos;</div><div align="justify"></div><div align="justify">Adicione água fervente e parte da água da pré-cozedura do choco. Deixe voltar a ferver;<br />Adicione o choco cortado em quadrados, tape o tacho e deixe cozinhar cerca de 20 a 30 minutos, mexendo ocasionalmente;<br />Adicione o feijão e deixe ferver em lume brando mais 15 a 20 minutos, dependendo da textura do feijão escolhido;<br />Adicione os camarões, alguns com casca outros descascados. And you don’t need to cook it the way I do. You can cook this stew with cuttlefish, squid, octopus or any other kind of seafood, always adapting the cooking time. You also can avoid the use of prawns if you have any allergic problems.<br />About the beans, you can choose any variety of you preference. Kidney, red, cannellini, borlotti or pinto beans are very good options. If you use dry beans, soak it in water for at least one day before and pre-boil it until tender.<br />Feel free to adapt seasonings, fresh or dry herbs according to your taste.<br />That’s all.<br /><br /><strong>YOU WILL NEED (serves 6 to 8):<br /></strong>1.2 kg / 2 lb and 10 ¼ oz of cleaned cuttlefish;<br />300 gr / 10 ½ oz of prawns;<br />Salt;<br />Lemon juice, freshly squeezed.;<br />150 ml / 5 ¼ fl oz of extra virgin olive oil;<br />1 and ½ yellow onions, diced;<br />4 garlic cloves, sliced;<br />2 bay leaves;<br />1 fresh chili;<br />300 gr / 10 ½ oz of fresh ripe skinless tomatoes, diced (you can use good quality caned tomato);<br />1 tablespoon of tomato paste;<br />1 teaspoon of dried oregano;<br />100 gr / 3 ½ oz of white turnip, thinly diced;<br />1 carrot, sliced;<br />100 gr / 3 ½ oz of chorizo, sliced;<br />2 glasses of white wine;<br />Boiling water;<br />800 gr / 1 lb and 12 ¼ oz of pre-boiled kidney beans, (caned – net weight);<br />1 handful of fresh coriander coarsely chopped;<br /><br /><strong>METHOD:<br /></strong>Open, clean and wash cuttlefish. Drain and season with salt and lemon juice. Reserve for one hour;<br />Pre-boil cuttlefish in a stewpot with salt, 1 glass of water, 1 glass of white wine, ½ onion and 1 bay leaf. Allow 20 to 30 minutes boiling;<br />Drain cuttlefish and cut into squares. Reserve some of the cuttlefish boiling water to add to the stew;<br />Pre-boil prawns with a good amount of salt and a glass of water. Depending on the size boil it for 3 to 5 minutes. Drain and reserve;<br />In a big stewpot heat olive oil and add, by this order, onion, garlic, bay leaves, chili, tomato, tomato paste, oregano, turnip, carrot, chorizo and 1 glass of white wine. Allow 15 minutes cooking on medium to low heat;<br />Add boiling water and some of the cuttlefish boiling water. Bring to a boil;<br />Season with salt;<br />Add pre-boiled cuttlefish squares and put the lid on the saucepan. Cook for 20 to 30 minutes on medium heat, stirring once in a while;<br />Add pre-boiled beans and bring back the boil. Allow 15 to 20 minutes boiling on medium to low heat;<br />Add prawns to the pot, some peeled and some unpeeled. Muito simples de preparar e com um custo muito baixo esta sopa é um perfeito exemplo das origens humildes da cozinha alentejana, evidenciando as suas características verdadeiramente inventivas.<br />Existem muitas versões desta sopa com variações nas ervas aromáticas utilizadas e nos seus acompanhamentos. Por vezes a sopa de tomate é servida com peixe frito, carne de porco ou até frutas frescas como figos ou uvas. São todas deliciosas mas a minha preferida é esta que aprendi com a minha mãe, servida com toucinho e chouriço fritos previamente, com ovos escalfados e fatias de pão duro. Prato ideal para o inverno com uma energia deliciosa para lhe aquecer o corpo e a alma. </div><div style="TEXT-ALIGN: justify"><br /><strong>VAI PRECISAR DE (serve 4):<br /></strong>2 colheres de sopa de azeite;<br />100 gr de toucinho branco conservado em sal, fatiado, ou<br />2 colheres de sopa de banha de porco;<br />100 gr de chouriço de carne, fatiado;<br />100 gr de chouriço de sangue, fatiado (opcional);<br />1 cebola grande, fatiada;<br />4 dentes de alho, fatiados;<br />1 folha de louro;<br />1 colher de sopa de polpa de tomate;<br />1 colher de chá de colorau;<br />1 colher de chá de orégãos secos;<br />100 ml de vinho branco;<br />800 gr de tomate maduro, sem pele, laminado grosseiramente;<br />Tiras de pimento verde, vermelho ou amarelo;<br />Sal;<br />Água;<br />4 ovos de bom calibre;<br />Fatias de pão (duro de preferência);<br />1 mão cheia de coentros frescos, grosseiramente picados;<br /><br /><strong>MÉTODO:<br /></div></strong><div style="TEXT-ALIGN: justify">Num tacho aqueça o azeite e frite o troucinho até ficar dourado. Retire e reserve. De seguida, nessa gordura, frite ambos os tipos de chouriço. Retire e reserve. Se usar banha de porco não terá que efectuar este passo;<br />Na gordura obtida com as frituras anteriores adicione a cebola, o alho, o louro, a polpa de tomate, o colorau, os orégãos, o vinho branco, o tomate e o pimento. Deixe refogar durante cerca de 15 minutos em lume brando;<br />Adicione água fervente suficiente para cobrir tudo muito bem e para ensopar bem as fatias de pão no momento de servir;<br />Baixe o lume, tape o tacho e deixe ferver durante mais 15 minutos;<br />Adicione os ovos com cuidado, um por um, e deixe-os escalfar;<br />Corte o lume quando os ovos estiverem com a consistência desejada;</div><div style="TEXT-ALIGN: justify">Adicione os coentros picados e mexa com cuidado;<br />Forre o fundo dos pratos individuais com fatias de pão e sirva a sopa sobre elas;<br />Decore cada prato com pedaços de toucinho e chouriço frito.</div>Carlos Balona Gomeshttp://www.blogger.com/profile/02656384299247132244noreply@blogger.com0
